摘要:以四种不同产地的黑豆为原料,经过人工去皮得到黑豆种皮.采用超声波提取法提取黑豆种皮花色苷,通过单因素试验,比较了四种产地黑豆种皮花色苷的质量比.结果表明,其他条件相同时,提取时间为20 min时,绥化产黑豆种皮浸提液中花色苷的质量比最高,为2.668mg/g;提取温度为60℃时,大连产黑豆种皮浸提液中花色苷的质量比最高,为2.113 mg/g;料液比为1:50时,五常产黑豆种皮浸提液中花色苷的质量比最高,为3.035 mg/g;提取剂体积分数为40%时,五常产黑豆种皮浸提液中花色苷的质量比最高,为2.617 mg/g.%In this paper, seed capsule of four kinds of black beans which were from different places was got by artificial methods. Anthocyanin was extracted from the seed capsule by ultrasonic wave. Single factor test was taken to compare the anthocyanin content of four kinds of black beans. The results showed that: with other conditions the same, when the extraction time was 20min, the anthocyanin content of the black beans from Suihua was the highest, which was 2. 668 g, when the extraction temperature was 60 ℃, the anthocyanin content of the black beans from Dalian was the highest, which was 2.113 mg/g; when the ratio of feed liquid was 1∶50, the the anthocyanin content of the black beans from Wuchang was the highest, which was 3.035 mg/g; when extraction concentration was 40% , the anthocyanin content of the black beans from Wuchang was the highest, which was 2. 617 mg/g.
