The objective of this work was to observe the effect of the treatment time (0, 3, 4 and 5 min) with ultrasound, high intensity (37 KHz) and magnetic fields (1 T) on the microbiota (Mesophiles) and the production of beef loin of tuna (5 days 4°C) histamine (Thunnus albacares). The samples were packed vacuum before of its treatment. The results showed that treatment with ultrasound agencies Mesophiles microbial flora as histamine production are reduced significantly (p<0,05) with the treatment time, reaching in greater treatment time reductions 5,720 ufc and 1.125 mg/100 g respectively. Same behavior note with the treatment of magnetic fields whose final results observed a reduction of 4,880 ufc of Mesophiles and 1,332 mg /100g of histamine. Results expressed effectiveness of treatment for the conservation of fisheries products.
